Blueberry Compote

I think I may have an obsession for blueberries… I originally bought blueberries for my son to snack on, and it has quickly become a favorite of mine. Especially when I want something sweet and don’t want the calories that come with it.  I now keep a mandatory stash of blueberries in my freezer. It’s something about the cold, sweet, and sour taste that satisfies my taste buds perfectly.

Since I recently bought a large bag of blueberries from Costco, I had plenty on hand to experiment with.  So, I made a compote and used it to top off my Banana Oat pancakes, and it was a delicious pairing.  I can totally see this going with Greek yogurt, ice cream, or cheesecake.  So many possibilities… The ingredients are really simple: blueberries, lemon juice, lemon zest, vanilla extract, sugar, water, and cinnamon (not pictured).

I got distracted when my son started singing from the bathroom after he finished. He’s a real character!  He hasn’t been potty-trained for too long so I only have a short window before there may be a mess to clean up.  I totally forgot about the cinnamon. Once I got back to business, I could hardly keep my son out the way to get these photos. Peep the photo below as he definitely stole my last few blueberries.  Yeah, and eventually a lemon slice appeared in his mouth.

Anytime I’m in the kitchen, he knows Mommy is up to something sweet… and he just follows me everywhere! Everywhere! I know you Mom’s understand what I’m talking about. LOL

Blueberry Compote

  • Difficulty: easy

Ingredients

  • 2 cups frozen blueberries
  • 1/2 cup Turbinado Sugar
  • 1/4 teaspoon Vanilla Extract
  • 1 cup water
  • zest from 1 lemon
  • juice from half a lemon
  • dash of cinnamon

Directions

  1. Combine all ingredients in a sauce pan and bring to a boil.
  2. Simmer for 20-25 minutes until the sauce reduces in size. Stir occasionally to make sure the sauce isn’t burning at the bottom.
  3. Remove from heat and let it cool to desired temperature.
